[Simple introduction of pan mee/ban mian/mee hoon kueh/dao-mah-chet]
[板面/面粉果/刀嫲切的简单介绍]


Mee hoon kueh, is a kind of traditional Nanyang Chinese food. Normally it is served in a hot bowl which contains the noodle pieces (mainly made by flour), vegetables, ikan bilis (anchovy), egg, and fish stock. Different “ji guan” (ancestral home) comes with different names and different ways of cooking.
面粉果,南洋华人风味美食之一。通常以热碗方式,配以粉果(主要由面粉制成),蔬菜,江鱼仔,鸡蛋和用鱼骨熬成的汤底。不同籍贯有着不同的名称,以及不同的烹调方式。


For example, the name ‘Mee hoon kueh’ actually comes from Hokkien. Using hand to tear the dough into bite size and flatten it to become the noodle pieces, which are thick and irregular in shape, and without using noodle machine. You can feel the taste of ‘totally hand-made’ from the noodle pieces.
譬如说,福建人称之为面粉果。把面粉团用手撕捏成一小小片虽然厚但形状不规则的面粉片,完全没有依赖制面机。吃着面粉片能感受到那“完全手撕”的特别性。

For KL style, it is normally called ‘ban mian’ or ‘sau mit pan min’ (hand-tore ban mian). Differ from the way of preparing of mee hoon kueh, it uses noodle machine to flatten the dough, and tear the dough into pieces after that. The shape of strands is more regular and slighter compared with Hokkien style. And the normal ‘ban mian’, or ‘pan mee’, is using the same dough but using the noodle machine to cut into noodle shape, and served in noodle form.
在吉隆坡,这类食物通常被称呼为‘板面’或‘手撕(搣,mit1)板面’。与面粉果不同的是板面通常不是用手直接撕面粉团,而是先用制面机将面粉团碾平,才手撕面粉团。面粉片比较薄,形状上也比较工整。而普通所常见的板面则使用同样的面团,以制面机切成面条形状,才是我们平常所见的板面。

For Hakka style, it is called ‘dao-mah-chet’. It uses the glass bottle to roll the dough to flatten it and then use the knife to cut into regular shapes. The shape of noodle pieces is more in a square, compared with the above two.
客家人的面粉果叫做‘刀嫲切’。与其他两者不同的是面粉团是用玻璃瓶将面团碾平,再用刀切出方形形状。所以刀嫲切面粉片的形状是比较方形的。

As you can see, they are basically (technically) same. However, different “ji guan” serves the food in a different style, taste and memories.
由此可知,面粉果、板面和刀嫲切基本上(在制作方法上)是相似的。不过,不同籍贯所带来的食物呈现方式、味道、回忆则不尽相同。

As you can see, there are workers (Is the man who stands in the front most the boss?) who stands in front of the cooking pot, taking the dough, and tear off into small sizes by hand in lightening speed. Freshly made for the best quality.
如图所示,员工们(站在最前面的那个好像是老板)站在锅子前,左手拿着面团,右手熟练且快速的撕面团。碗碗保证是新鲜热辣出炉。


There are three sizes available: small, large and extra large. It stands for the number of dough used too. Small size will serve one dough, one and a half of dough for large size and two toughs for extra large size.
店家提供了三种碗容量:小、大、加大,而碗容量也代表了面团的数量。小碗的面粉果使用了一粒面团,大碗一粒半的面团,加大碗则是两粒面团。

The noodle pieces are surprised: it is not as thick as normal mee hoon kueh noodle pieces. It is quite slight and the thickness is quite similar to the noodle pieces that come out from noodle machine. Easier to bite, easier to swallow.
面粉片相当的特别:一般的纯手撕面粉果会比较厚,因为手撕捏的时候,手捏技术比较差的话,面粉片会相当的厚。可是这家的面粉果虽然是纯手撕捏,但是面粉片却如机器压过般一样薄。容易咬,容易吞。

It serves with hoon kueh (noodle pieces), egg, anchovies, vege, pork slices and pork liver. Ask them to remove the pork liver if you don’t eat pig organs.
面粉果除了面粉皮(粉果)外,还有鸡蛋、江鱼仔、蔬菜、猪肉片和猪肝。如果不吃内脏,记得吩咐店家把猪肝拿走。

One day, me went to Klang and would like to have some meal after finish my work. It’s 4pm already and where should me go? Since me was at somewhere near to Taman Berkeley, why don’t me visit the mee hoon kuih shop again?
五月的某日,小编刚好在巴生做完工作后想吃点东西。下午四点了小编该去哪儿呢?既然小编所在位置靠近百家利花园,那为何不如再去面粉果食肆呢?


It was 4pm and me was informed that mee hoon kueh had been sold out (!!!!). And me just ordered a bowl of mee suah in large size bowl.
下午四点时小编被告知面粉果已经卖完了!!小编只好点一碗大碗的面线吧。

Actually this shop offers variety of choices in noodles, such as yee mee, mee suah and non-fried noodles. The price and the portion of the noodles above are same with mee hoon kueh (i.e. small size = one noodle block = RM 3.50, extra large size = two noodle blocks = RM 4.00) as well.
其实这件食肆除了售卖面粉果之外,还有伊面、面线和非油炸面供选择。价格和分量和面粉果的算法是一样的,小碗一粒面售RM3.50,加大碗两粒面售RM4.00。


The mee suah is quite normal as those what we can buy at the market as usual. However, the mee sua is not over cooked and is served in a perfect timing. Slrrrrrppp!
店家所使用的面线和市面上所售卖的面线差不多。不过面线煮得刚刚好,不会有面发胀的情况。Slrrrrrpppp!




The ingredients in the bowl and the stock are same with the mee hoon kueh too. See the pork slices and pork liver!
使用的配料和汤头和面粉果的是一样的。看那猪肉片和猪肝!

Ventilation in the shop was quite bad, start sweating very fast after getting the table.The soup is just normal, the "kuey" are good as expected. If their ‘kueh’ is not as special as this, it will be just a typical mee hoon kueh with cheap price and a long queue.
食肆的空气流动很差,就坐后很快就会流汗。汤头普通,但是“果”与自己的预期一样好。但如果他们的‘粉’不够特别,那会只是一间便宜又大排长龙的面粉果食肆。
